Habenero Garden Pancakes
1/2 cup all-purpose flour
1/2 tsp. baking power
1/2 tsp. salt
1-3 Tbsp. Habenero Seasoning-depending on how hot you want them
1/4 cup milk
1 cup grated carrots
1 cup grated zucchini
1 medium onions, diced
2 Tbsp. oil
Shredded the zucchini approximately one hour ahead and sprinkled with salt. Squeeze out the water from the zucchini before adding it to ingredients.
In a mixing bowl, stir together the flour, baking powder, salt, and Starla's Seasoning Mix.
In another bowl, beat together the egg, milk, carrots, zucchini, and onions. Add this to the dry ingredients and stir until combined.
In a large skillet, heat 1 tablespoon of oil over medium heat. Pour the batter by tablespoons into the pan, then press them down flat with the spatula, so they will cook though out.
Cook about 2 minutes on each side and golden brown. Add the remaining oil to the pan as needed. Serve pancakes at once.
* Excellent with Grandma's Garden, Peppercorn Ranch, Citrus Dill, Mustard Horseradish, Twisted Tomato or if you want a kick: Buffalo Wing ranch, Mango Chipote or Hot Habenero.
